Betty’s Intriguing Philly Beef Casserole Recipe

In this video, Betty demonstrates how to make a unique and unusual casserole recipe–Intriguing Philly Beef Casserole. The casserole consists of campenelle pasta, Swiss cheese sauce, caramelized onions, and tender chunk beef in its own gravy. The taste is reminiscent of a Philly Steak Sandwich–mmm…good! Ingredients: 6 oz. campanelle pasta (or elbow macaroni or shell or bow-tie pasta, etc.) 1/2 medium to large pot of rapidly boiling water that has been salted with 1 tablespoon salt 1 tablespoon butter or margarine (for sauteing onions) 1/2 medium onion, cut into quarter-circles 2 tablespoons butter or margarine (for making Swiss cheese sauce) 1/4 cup flour 2 cups milk 1 1/2 (6 oz.) shredded Swiss cheese 1/2 teaspoon salt (for the cheese sauce) 12 oz. can tender-chunk roast beef in gravy (I used Hormel. If you can’t find the canned variety, there are beef chunks in gravy in the refrigerator section of your supermarket–or use leftover roast beef and either leftover gravy or gravy made from a mix.) cooking oil spray Place 6 oz. campanelle pasta in rapidly boiling water that has been salted with 1 tablespoon salt. Cook over low heat for about 8 minutes, until al dente (chewy, not mushy). While your pasta is cooking, prepare your caramelized onions and Swiss cheese sauce. Melt 1 tablespoon butter in a small skillet and add 1/2 medium onion, sliced into quarter-circles. Saute the onion until it is clear, and becoming brown. Betty’s Baked Coconut Shrimp with Jamaican Jerk Seasoning Recipe

In this video, Betty demonstrates how to make light Baked Coconut Shrimp with Jamaican Jerk Seasoning (with the “help” of her grandson, Carter). This is a great alternative to fried shrimp. The shrimp is dredged in a Jamaican jerk seasoning mix, then dipped in egg white, dredged in a mixture of coconut, panko breadcrumbs, and paprika. Finally, it is sprayed with cooking oil spray and baked in the oven to a golden brown. Ingredients: 1 pound unpeeled, raw large white shrimp 1 to 2 egg whites ¼ cup cornstarch 1 tablespoon Jamaican jerk seasoning 2/3 cup sweetened flaked coconut 2/3 cup panko breadcrumbs 1 teaspoon paprika cooking oil spray Wash and peel 1 pound of shrimp, leaving the tails on, and set aside. In a small mixing bowl, beat or whisk 1 or 2 egg whites until frothy, and set aside. In a small, shallow dish, mix together ¼ cup cornstarch and 1 tablespoon Jamaican jerk seasoning, and set aside. In another small, shallow dish, mix together 2/3 cup flaked coconut, 2/3 cup panko breadcrumbs, and 1 teaspoon paprika, and set aside. Dredge shrimp, one at a time, in cornstarch mixture. Dip in egg whites, and dredge in coconut mixture. Place the shrimp on a broiler pan that has been sprayed with cooking oil spray. When all shrimp are placed on broiler pan, spray the top of the coated shrimp with cooking oil spray. Bake in a 425 degree oven for 10 to 12 minutes. (I baked mine for 10 minutes, and then turned the oven off and let them sit in the oven for a couple of minutes

Betty’s Christmas Cherry-Pineapple Punch Recipe

In this video, Betty demonstrates how to make a delicious Christmas Cherry-Pineapple Punch. With her special ice cubes, you can having lovely, flavorful chilled drinks! Ingredients: (I am writing this recipe, assuming that no sugar-free products are used; therefore, sugar will be an ingredient. If you want an almost sugar-free drink, please follow the instructions on the video. Also, this recipe makes double the amount shown in the video.) 2 small packages cherry Jello 1 package cherry Kool-Aid 2 cups sugar 4 cups boiling water 6 cups water 2 large cans unsweetened pineapple juice 2 quarts (a 2-liter bottle) ginger ale In a large punch bowl, dissolve 2 small packages cherry Jello, 1 package cherry Kool-Aid, and 2 cups of sugar in 4 cups boiling water. (If you do not have a large punch bowl, you can use large bowls, Dutch ovens, etc., and make the punch by halves, if necessary.) Add 6 cups water, 2 large cans unsweetened pineapple juice, and 2 quarts (a 2-liter bottle) of ginger ale. Stir completely. Chill in the refrigerator. You may store it in pitchers in the refrigerator after it is mixed together. Note: This makes a large amount of punch. You may need to cut the recipe in half, if you have space constraints. I only made half of the recipe in the video. Even though this is a large amount of punch, it will go very quickly, because it tastes great, and it is so refreshing! The whole family will love it! — plus it is great for events, like receptions!
